Sorry for not responding you in Italian (I'm a Dane living in Italy and my Italian isn't that great for explaining difficult stuff)!
As Luisa has pointed out, you could apply for the regime dei minimi. It has certain limits (you can only do it for 5 years (I think) and you have to be under 35 years old), but this is only relevant if you earn more than €5000 a year. If your collaborate with clients outside Italy you really need to be registered in VIES (as PLR Traduzioni points out) - I think that it will make everything easier for you!
I, personally, have the regime dei minimi + the VIES registration (Go to your local Agenzie delle Entrate to sort this out - it is, fairly, easy) and I have a commercialista to do my accounting (since I don't know how the Italian system works and I want to be sure that everything is regulare :-))
